Ingredients


250g dried udon noodles (400g frozen or fresh)
2 tbsp sesame oil
1 onion
, thickly sliced
¼ head white cabbage, roughly sliced
10 shiitake mushrooms
4 spring onions
, finely sliced
For the sauce
4 tbsp mirin
2 tbsp soy sauce
1 tbsp caster sugar
1 tbsp Worcestershire sauce (or vegetarian alternative)

Method

  1. Boil some water in a large saucepan. Add 250ml cold water and the udon noodles. (As they are so thick, adding cold water helps them to cook a little bit slower so the middle cooks through). If using frozen or fresh noodles, cook for 2 mins or until al dente; dried will take longer, about 5-6 mins. Drain and leave in the colander.
  2. Heat 1 tbsp of the oil, add the onion and cabbage and sauté for 5 mins until softened. Add the mushrooms and some spring onions, and sauté for 1 more min. Pour in the remaining sesame oil and the noodles. If using cold noodles, let them heat through before adding the ingredients for the sauce – otherwise tip in straight away and keep stir-frying until sticky and piping hot. Sprinkle with the remaining spring onions.

250g frozen mixed berry
250g 0%-fat Greek yogurt
1 tbsp honey or agave syrup

Method

  1. Blend berries, yogurt and honey or agave syrup in a food processor for 20 seconds, until it comes together to a smooth ice-cream texture. Scoop into bowls and serve.

Ingredients

3 tbsp harissa
½ x 500g pot low-fat natural yogurt
4 skinless chicken breast, slashed
1 small butternut squash, peeled, deseeded and cut into long wedges
2 red onion, cut into wedges

Method

  1. Heat oven to 200C/180C fan/ gas 6. Mix 2 tbsp of the harissa with 3 tbsp of the yogurt. Rub all over the chicken breasts and set aside to marinate while you start the veg.
  2. Toss the squash and the onions with remaining harissa, mixed with 2 tbsp oil (sunflower, vegetable or olive is fine), and some seasoning in a large roasting tin. Roast for 10 mins.
  3. Remove veg from the oven, add the chicken to the tin, then roast for a further 20-25 mins until the chicken and veg are cooked through. Serve with the remaining yogurt on the side, and a big bowl of couscous or rice.

Ingredients

500g skinless boneless chicken thighs
1 tbsp vegetable oil
1 medium onion
, chopped
2 tsp sweet smoked paprika
2 tsp ground cumin
2 tbsp cider vinegar
1 tbsp chipotle paste
200ml passata
2 tbsp soft brown sugar
½ small pineapple
, cored, peeled and chopped
½ small pack coriander, chopped
corn or flour tortillas
hot sauce (I like Tabasco Chipotle), to serve

Method

  1. In a food processor, roughly blitz the chicken thighs into chunky mince. Alternatively, chop into bite-sized pieces.
  2. Heat the oil in a large saucepan. Add half the onion and the chicken mince. Season well and cook for about 5 mins on a high heat to brown, breaking up the meat with a spoon. Add the spices, vinegar, chipotle paste, passata and sugar. Cook for another 5 mins, then remove from the heat. 
  3. In a small bowl, mix the remaining onion, the pineapple and coriander. Serve the chicken and the pineapple salsa with warm tortillas and hot sauce.

Ingredients

  • 25g flaked almonds
  • 1 tsp cold-pressed rapeseed oil
    Rapeseed oil

  • 2 boneless, skinless chicken breasts (about 300g/11oz total)
  • lime

For the sauce

  • 2 tsp cold-pressed rapeseed oil
    Rapeseed oil

  • 1 medium onion
    Onion

    , roughly chopped
  • 2 garlic cloves, finely chopped
  • thumb-sized piece ginger
    Ginger

    , peeled and finely chopped
  • 2 tsp medium curry powder
  • 1 star anise
    Star anise

  • ¼ tsp ground turmeric
  • 1 tbsp plain wholemeal flour

For the rice

  • 100g long-grain brown rice
  • 2 spring onions
    Spring onions

    , finely sliced (include the green part)

For the salad

  • 1 medium carrot
    Carrot

    , peeled into long strips with a vegetable peeler
  • ⅓ cucumber, peeled into long strips with a vegetable peeler
  • 1 small red chilli
    Chillies

    , finely chopped (deseeded if you don't like it too hot)
  • juice ½ lime
    Lime

  • small handful mint leaves
  • small handful coriander leave

Method

  1. Heat oven to 220C/200C fan/gas 7. Cook the brown rice in plenty of boiling water for 35 mins or until very tender.
  2. Crush the almonds using a pestle and mortar, or blitz in a food processor until finely chopped, then sprinkle over a plate. Grease a small baking tray with a little of the oil. Brush the chicken on both sides with the remaining oil and season well. Coat the chicken with the nuts and place on the tray. Press any remaining nuts from the plate onto each breast. Bake for 20 mins or until browned and cooked through. Rest for 4-5 mins on the tray, then slice thickly.
  3. Meanwhile, make the sauce. Heat the oil in a medium non-stick saucepan and add the onion, garlic and ginger. Loosely cover the pan and fry gently for 8 mins or until softened and lightly browned, stirring occasionally. Remove the lid for the final 2 mins, and don’t let the garlic burn.
  4. Stir in the curry powder, star anise, turmeric and a good grinding of black pepper. Cook for a few secs more, stirring. Sprinkle over the flour and stir well. Gradually add 400ml water to the pan, stirring constantly.
  5. Bring the sauce to a simmer and cook for 10 mins, stirring occasionally. If it begins to splutter, cover loosely with a lid. Remove the pan from the heat and blitz the sauce with a stick blender until very smooth. Adjust the seasoning to taste. Keep warm.
  6. Once the rice is tender, add the spring onions and cook for 1 min more. Drain well, then leave to stand for a few mins while you make the salad. Toss the carrot and cucumber with the chilli, lime juice and herbs.
  7. Divide the sliced chicken between two plates, pour over the sauce and serve with the rice, salad and lime wedges for squeezing over.

Method

  1. Add all the ingredients except the oil to a food processor with a pinch of salt and blitz until smooth. Transfer the batter to a jug, cover with cling film and leave to rest in the fridge for 1 hr.
  2. Heat oven to 220C/200C fan/gas 7. Spoon a tsp of oil into eight holes of a muffin tin and place in the oven for 5 mins to get really hot. Remove the tin from the oven and carefully pour the batter into the hot oil. Return to the oven and bake for 25-30 mins until risen and deep golden brown.
